Take a peek at some of the recipes I've been loving lately:
*Ham and Cheese Frittata: Made this for brunch with oven home fries. It was good, but I'd probably try something else next time. It was salty and I much prefer quiche, anyway.
**Chocolate Zucchini Cookies: When you're tired of making zucchini bread, make these. I omitted the chocolate drizzle because these are fudgy enough as is, they're rich!
***Kale Caesar Salad: I've mentioned this a billion times, but I replace the anchovies with a couple shakes of worcestershire.
***Best Pizza Sauce: I also did my anchovy replacement in this recipe. It was delicious!
**Fettucine Bolognese: I'm not a huge meat sauce person, but we had a bunch of ground beef leftover from a weekend cook out, and I decided to make this on a rainy day. It was delicious and I'm happy to have the leftovers in my freezer for a busy week.
*Arugula Pizza: I'm giving this one star because it was just good, but I think it was my fault. I stupidly didn't see that the toppings are for TWO pizzas, not one, so ours had way too much cheese and a soggy layer of too-much arugula. Definitely making again with half the toppings!
***Killer Garlic Bread: It may be shocking that my favorite garlic bread doesn't involve cheese, but this is my preferred method. It's the perfect accompaniment to saucy pasta or a big salad.
***Chicken Wing Dip: AKA the best happy hour treat in all the land. I use my friend Erin's recipe, with a few tweaks. I mix ranch into the cream cheese layer (4:1, cream cheese:ranch ratio). I mix in about 1/3 cup of shredded cheese into the chicken layer. I use rotisserie chicken shredded for this and let it soak into Frank's Wings sauce for at least 20 minutes before assembling. For the topping, I use a mix of cheddar and monterey or colby jack cheese (both must be freshly shredded). If the crowd allows it, I top with blue cheese or blue cheese dressing once out of the oven (just a sprinkling!). Serve with Tostitos Scoops!
